Cloud eggs recipes have been popping up everywhere and it’s easy to see why. Once you’ve tried this healthy cloud eggs recipe once, they’ll become a regular go-to recipe in your house. Eggs in a nest are light, fluffy and create so much volume so that you feel like you’re eating more than you are. While being low calorie (depending on what you serve them with) and high protein. Although, sometimes a little gooey, melted cheese is worth the extra calories.

Healthy Cloud Eggs Recipe: Lower Calorie & Higher Protei

Quick & Easy Cloud Eggs Recipe | 3 Ingredients Only
Ingredients
- 1 whole egg
- 3/4 cup egg whites
- Coarse salt (Maldon or Himalayan)
Directions
- Preheat your oven to 400° F
- Line a baking sheet with aluminum foil or coat with non-stick spray. Foil makes it mess free & reduces the fat content.
- Separate the egg yolk from the egg whites and put to the side.
- Add that egg white to the other egg whites in a very clean jug or mixing bowl. Grease prevents the eggs whipping as nicely.
- Add a pinch of salt to the egg whites and whisk with a handheld electric mixer. Start on low and move to high so it doesn’t go everywhere when you start.
- Whisk until stiff and it can form peaks approx 3-4 minutes. Looking like clouds!
- Spoon out the raw cloud egg whites onto your prepared baking sheet. I like to make 1 big 1 to use the 1 yolk in later but you can make smaller ones if you prefer. Leave a 1-2″ deep well in the middle.
- Bake for approx 4 minutes until they are dry and very lightly golden. Then remove from the oven and add the yolk carefully into the well. You can also make them without the yolk to save calories and cholesterol.
- Return to the oven and bake until the yolk is how you like it. Whether that’s runny or firm. Approx 2-4 minutes.
- Season and serve hot!




What to serve with cloud eggs
The traditional way to serve cloud eggs or eggs in a nest is with buttered muffins or brioche. To make it healthier and gluten free, skip the bread and serve with fresh fruit for breakfast or brunch.
For lunch or dinner, serve them with salad or steamed vegetables. I tend to make this cloud eggs recipe for lunch or dinner rather than breakfast as it’s too time consuming in the morning.
